Quick question to those with experience of using lime plaster - how to you create a key without using an inappropriate bonding product to put a thin finish coat over a pre-existing lime plastered wall? Or should we just leave it as it is and just patch it up instead?

Depends what the issue is? But skimming a top coat isnt a great plan. Rarely is it necessary though, patching in as you say would be a good way forward, preserving what’s there. Patching approach depends on how much area and how deep the patches are…

Not quite as simple as it sounds unfortunately, to create a key you'd use a devil float to scratch the surface up, but don't go too deep for obvious reasons.
The problem with skimming old lime is how dry it can be and therefore controlling suction, I usually start watering the wall days before I plan to skim.
