You want a good air gap behind all units, low or high. More than the fitted high street guys will provide. And ideally a very well vented plinth also to ensure lots of airflow to allow the walls to evaporate freely.
If you find a good local kitchen / joinery outfit then you can ensure all the necessary airflow and design self standing units, including dresser style if high level is needed, to minimise/remove any need for wall fitment.
Ours is all effectively in a U shaped space, so units aren’t going anywhere as they’re basically locked in place. And we avoided any high cabinets due to a relatively low ceiling height.
Not cob, but very dry fragile early Georgian bricks which tend to crumble if you look at them wrong, so no desire to drill into them to hold any weight. Plus it’s a wall susceptible to damp, due to historic levels and the porosity of the bricks, so evaporation and airflow was essential.

Indeed - ceiling at only 2.1m in what was the old stables/hayloft, made things feel too claustrophobic with the kitchen we inherited that covered every wall with high units! The extra amount of light through the two windows as massively improved too…
