Happy days - hot mix it is then, I will be doing the same with a priming coat of lime wash to start us off. Is there a recommendation for max depth per coat with the insulated plaster mix that you have suggested there?

You’ll get the feel for it, too much and it will sag and fall off the wall, around 15 - 25mm per pass is good if achievable. There’s plenty of videos on my IG regarding the mix, ratio etc

I managed to do 40mm with NHL based hemp lime render but it was murder on the wrists trying to shift that weight around on the wall in one pass, much better doing multiple passes
