He's probably going to use thin battens or strips of hardboard etc. fixed to the joists. When fixing plasterboard the joists need to line up reasonably well. Even being 5mm out means that when you screw in, the board can spring back and the screw head goes through the paper. I always use a line to make sure studs or joists line up.
When they used laths, it didn't matter as much, because being timber they will bend to the shape, and the lime plaster was thick enough to produce a flat surface.
