Just had offer accepted! 100+ year property (no one seems to be sure) and beautiful. Mini yay! I'd like to get a surveyor in before starting the conveyancing process but vendors agents are pushing for conveyancer details. Is this a typical way of doing things on old houses or should I gamble and pay the conveyancer first?

I don't think this is really an 'old house' thing. The vendors agents are really only interested in selling the property as quickly as possible and with as little effort as possible so they get their commission. They won't care about the about condition of the property, they just want it sold.
I'm assuming from your location that the property is in England, in which case any offer to buy and acceptance to sell is not legally binding until contracts are exchanged so there is plenty of time to change your mind based on survey results. Whether you would have to pay something to your conveyancer before exchange of contracts (or be liable to pay if you pull out) is something to negotiate with your conveyancer.

Unfortunately as Flyfisher stated, nothing is legally binding to either party, so you could spend out on a survey which found the property to be in excellent order, only to find that the vendor has received a better offer. A lot depends on the market forces at the time, and who is the keenest to sell or buy. I can understand why you would want a survey done first, which would also help the conveyancer if any Building or Planning regs came up.

If you're going to do it at all, you Always get the survey done and the results in your hands Before you make an offer. Conveyancing is not optional and you will be obliged to advise who will be acting on your behalf in the transaction. You can however delay that notification if you are prepared to risk the owner/agent selling to someone else. Its your call.

When I bought my house I made an offer conditional on the survey results. No point having a survey before you know you can buy, no point getting the conveyancing done before the survey.
If the seller's estate agent is being a pain then you can always offer to address their concern by withdrawing your offer and making a new offer subject to survey.
